Research Project Details
Amylase is an enzyme that hydrolyses starch into simple sugars. The study involved isolating amylase-producing bacteria (Cd1 and Cd2) from locally fermented cereals and legumes. The selected bacterium (Cd2) was further processed for analysis.
Partial purification of amylase was conducted through ammonium sulphate precipitation and dialysis. The partially purified amylase was then characterized, with optimal activity observed at 50°C and pH 9. Addition of MnCl2 enhanced amylase activity, making it sustainable across a wide range of temperature and pH.
The potential applications of this research include utilizing the enzyme in various industries such as baking, fruit juices, and alcohol beverages, due to its sustainable nature and renewable sources.
