Partially purified amylase through ammonium sulphate precipitation and conducted enzyme characterization.
Characterization results showed high amylase activity at 50°C and pH 9, with enhanced activity in the presence of MnCl2.
Enzyme shows wide temperature and pH range suitability, making it valuable for various food industry applications.
Ample experience with plant-based amylase sources from legumes and cereals, emphasizing sustainability and renewability.
